veggie-versary: matt's favorite lunch

Today is my veggie-versary. Three years! And you said it wouldn't last... so hey, in honor of, here's the "recipe" for Matt's favorite vegan lunch of Tofu Tacos. Too Easy.
Ingredients:
1 thing of extra firm tofu
1/2 bottle of salsa
1 can of black beans, drained and rinsed
corn tortillas
olive oil
seasoning (optional- I used  Knorr's caldo de vegetales and crumble it 'til it's like salt)
avocado (optional)
Take the tofu out of the container and squeeze as much water out of it as you can.
Crumble it with your hands and put it in a bowl, it will look like scrambled eggs.
Put the salsa in the bowl with the tofu and let it soak up the salsa. About 5 minutes.
If you're adding seasoning, add that in there too.
Put oil in a frying pan, let it warm up, add the tofu and heat it up.
Add the black beans, heat them up.
Warm the tortillas, pile the tofu and beans on there.
Add avocado if so desired.
Enjoy, 'cause it's delicious!
The key I've learned with tofu is to season the crap out of it and with this one the salsa does the work for you. Let me know if you guys try it! I'd love to hear what non-veggies think of it.

This is one I will definitely try! It sounds really good. I haven't bought tofu before- anything I need to know? Is is labeled extra firm? I might add a little nonfat sourcream on top!

oooh sourcream... Fresh & Easy has them clearly labeled as extra firm and they're only 99 cents. Yes, with tofu if you have any leftovers before you cook it (if we're not super hungry we'll only use up half a cube of tofu) be sure to store it completely submerged in water and put it in an airtight container, any plastic one with a lid will do. Be sure to use it up in a few days before it starts changing color from white to some yellowish thing. And as far as knowing if it's cooked... we just guess when it's warm enough
