tofu benny

When I first got the Vegan Brunch cookbook this recipe was the one thing I wanted to try. It was so pretty, so perfect. 
Mine didn't look so perfect...
It involved a few steps and included vegan hollandaise sauce which is quite the feat believe you me. It wasn't beyond my realm of ability but it was just more steps for breakfast than I usually take. 
I tried to at least make it have a little flourish and used the vegan hollandaise sauce to make that squiggly thing. I even wiped the sides down like restaurants do with plates. Presentation my friends.
Heaven consists of heirloom tomatoes. 
For Matt's I didn't even try to stack it, I just plopped the elements on the plate and the whole thing may have looked wonky but believe you me, it was pretty tasty.
Now that Matt actually has weekends I take those opportunities to make us fancy vegan breakfasts. Before he was like the Dowager Countess all "what's a weekend?" and whatnot.
That's teapot #7 believe it or not. He's my 2nd favorite now and my tea thing is getting out of hand.
 We'll talk more about that later.
